无污染酿酒

  2003年,加州的酒商和葡萄的栽培者制定了“可持续葡萄种植和葡萄酒酿造工艺代码”,这个规定耕作和酿造实践对环境非常的敏感,需要全社会对耕作和酿造工艺的关注。

In 2003, the wineries and wine growers in California developed “Code of Sustainable Winegrowing Practices”. This code promotes farming and winemaking practices that are sensitive to the environment and responsive to the needs and interest of society in general.


   这个自主的规定公布了如减少杀虫剂的使用,水和能量守恒,损耗的减少和再生,腐蚀的控制,利用葡萄园里有益虫杀死有害虫,创造和保护在葡萄园附近的鸟类和其他野生动物的生存环境,种植覆盖地表的植被如芥菜和三叶草补充土壤的养份,改善农场工人的住房,和其他能提高葡萄酒质量的有效的方法。有一本小册子是帮助酒商贯彻执行的。

This voluntary code addresses issues such as reduced pesticide use, water and energy conservation, waste reduction and recycling, controlling of erosion, the use of “good bugs” in the vineyard to kill the “bad bugs”, creating and maintaining a habitat for raptors and other wildlife around the vineyards, planting cover crops such as mustard grass and clover to replenish the soil with nutrients, improved farm worker housing, and other measures for making high quality wines in a responsible manner. A handbook was created to help wineries implement the practices.

The Code of Sustainable Winegrowing encompasses more than organic farming, but organic farming is certainly part of sustainability. The organic designation is a legal term on labels for certain nonchemical winemaking and farming practices, whereas the Code of Sustainability is a broader concept of continually improving farming and winemaking practices, enhanced relations with staff, neighbors and communities, preservation of the land and conservation of natural resources.


  如果葡萄酒全部使用有机酿酒葡萄来酿造的,酒商可以在他们的葡萄酒上注明“由有机酿酒葡萄酿造”。这种葡萄酒可以在酿造过程中添加亚硫酸盐。尽管许多加州酒庄的葡萄酒是用有机葡萄酿造的,一些酒庄还是没有把此项标示在标签上。这样酒商们可以灵活应用。他们担心如果出现恶劣气候条件或者病虫害时,就必须使用化学药品来救活葡萄,这是他们未注明的最重要原因。

Vintners can label their wines as “made from organically grown grapes,” if the wine is made entirely from certified organic winegrapes. The wines may have added sulfites during processing. Although many California wineries make wine from organically grown grapes, some have chosen not to put this on the label. The most important reason is that they want to have the flexibility to apply inputs if it becomes necessary to save a crop during bad weather conditions or other pestilence.
