In the past few years, some wine varietals have become more important than others. Chardonnay and Cabernet Sauvignon are still the leading varietals, with Merlot and Zinfandel as runners-up. Pinot noir, Syrah, Petite Sirah, Sauvignon blanc, Pinot Gris and Viognier are clearly gaining in popularity in California.

Total vineyard surface in California decreased to 208.000 hectares in 2004, which is 7% less than in 1999. after the new planting boom in the late 90’s, supply is now more in line with demand. The split between red and white grapes has changed in favor of reds. almost 60% is planted with red and 40% with white wine varietals.
